Vinaigrette

This is the ideal place to include tofu, both in the dressing and on the salad. I promise, it will be good and everyone will love it!

1/2 cup ea: Balsamic vinegar and Canola oil
1/4 teaspoon dry mustard
1/4 bar soft silken tofu
Dash or two of garlic powder (opt)

Mix everything together in a blender or food processor. This is a very good dressing, able to stand on its own with all types of greens. Here’s a wonderful salad for it:

Make layers on a platter:
Mixed baby greens
Toasted chopped nuts
Dried cranberries
Feta or other cheese of your choice
Extra firm tofu, chunked into small pieces
Flax or sesame seeds
