Vegetable Soup
Here’s a really easy and tasty vegetable soup – don’t
laugh at the ingredients – they really work!
Twenty Minute Vegetable Soup
In a large pot, brown
1 pound lean ground beef
1 cup onion
1 teaspoon garlic.
1 jar chunky pasta sauce 26 oz.
Stir and add 2 cans beef broth
1 soup can water.
1 can tomatoes and chilies (sometimes called “Rotel” – it
comes in about a 10oz can).
1 pound bag of frozen mixed vegetables or frozen soup vegetables
1 can of cannelloni or great northern beans drained.
Bring to a boil and add salt to taste. Cook 20 minutes. Sprinkle a handful
of Parmesan or Cheddar cheese on each serving. If you have any fresh
spinach laying around, toss that in at the last minute, too.
