EASY TOFFEE APPLES

This is a candy-like harder coating than caramel and is a good keeper at room temperature or in the refrigerator. I like eating them plain but you can gild the lily and roll them into various toppings.

8-10 apples, washed and dried

Caramel:
1 stick salted butter
1/2 cup light brown sugar
1/2 cup dark brown sugar
1/4 cup light corn syrup
2 teaspoons vanilla
1/4 teaspoon baking soda

Over medium heat, in a 2 quart saucepan, bring to a boil everything but the soda. Boil 5 minutes. Add baking soda and stir well. Be careful as mixture will bubble up.

Apples:
Popsicle sticks inserted in apples
Crushed heath bars, kit kat candies, or nuts (optional)

Dip apples quickly in caramel and then in chopped candies or nuts, and place on sprayed foil-lined or parchment-lined cookie sheet.
