Want a crowd pleasing dish that is easy and delicious? I want to share one of my family’s favorite snacks. No kidding, you’ll win rave reviews for this one!
1 pound very lean ground beef, ground chicken, turkey or soy “meat”
1/2 cup water
1 pkg taco seasoning
1 teaspoon cumin
1 can, 16 oz, fat free or regular refried beans
3-4 cups broken up tortilla shells
2-3 cups shredded cheddar or Mexican cheese
1 jar, 16 oz., fat free salsa or Picante sauce
1 bunch green onions, sliced
1 carton, 16 oz., regular, light or fat free sour cream
Optional but good: 1 can, 16 oz, drained corn or frozen, thawed, about 1-2
cups
For garnish: tortilla chips, sour cream, chopped jalapenos, salsa, green
onions, shredded cheese, chopped tomatoes
In a large skillet or sauté pan, sauté meat. Add taco seasoning, cumin and water. Stir well. Make layers of all of the beans, half of the shells, half of the cheese, all of the salsa, green onions, corn if you’re using, and sour cream. Top with rest of shells and cheese. Put lid on and cook until cheese melts, about 10 minutes. Serves a crowd.
You can also scoop this up with tortilla chips, or add a layer of cooked short pasta in the middle for a main dish supper.
