Strawberry Salad

Sensational Strawberry Romaine Salad

Need a wonderful, delicious, lighter yet substantial salad to stand up to that holiday ham? Well, I have one that fills the bill! This is a standby on my holiday buffet. The dressing can be made ahead, as well as the salad. That leaves more time for you to enjoy the party!

1 head Romaine lettuce, chopped
1 head Boston lettuce, torn
or 1 bag mixed greens
1 pint strawberries, hulled and sliced
1 cup or more to taste Monterrey Jack cheese
1/2 cup or more to taste Feta cheese
1/2 cup chopped toasted pecans or walnuts
Sprinkling of flax seeds (optional but so good for you!)

Layer greens on platter. Sprinkle with berries, cheeses and nuts. Drizzle dressing over right before serving.

Dressing:

Whisk together:
1/2 cup red wine or raspberry vinegar
2 cloves garlic, minced
1/2 to 3/4 cup sugar or Splenda
1 cup Canola oil
Salt and sweet paprika to taste
Dash pepper
