Note this recipe uses Lovage, an herb that is a true celery substitute,
as an option.
Gosh, the low carb chocolate mousse I made a couple of weeks ago sure generated a lot of interest. One of the requests to low carb favorites was a classic spinach salad.
“It’s for my mother-in-law, who loves spinach salad but is trying to reduce the amount of sugar in her diet”. Splenda, which is what I’m using here, is a natural sugar substitute, made from sugar, but your body doesn’t recognize it as sugar, so it’s diabetic safe and non-caloric.
And the mint/citrus water? Well, that’s sweetened with Stevia, another herb which I love. Stevia is a natural sugar substitute, and is 30 to thousands of times sweeter than sugar, again non-caloric and yes, diabetic safe!
Whisk together:
1/2 cup cider or clear vinegar
2 tablespoons minced onion, or more to taste
1 teaspoon Dijon mustard or dry mustard
2 teaspoons celery seed or 2 tablespoons or so of Lovage, chopped
1/2 cup Splenda, or more to taste
Salt to taste
Slowly whisk in:
1-1/4 cups Grapeseed or Canola oil
Pour over bed of spinach, red or green onions, tomato slices, hard boiled egg, bacon crumbles, etc.
