Shrimp Pasta

SHRIMP WITH PASTA AND FETA

This shrimp pasta is a bit different and always gets raves reviews.

1 pound pasta, cooked and kept warm
1 pound shrimp, peeled and deveined
½ pound Feta, crumbled or more to taste**
1 bunch green onions, sliced thinly (use top and bottom)
1 teaspoon garlic or more to taste
2 cups chopped tomatoes
2 tablespoons fresh dill leaves, chopped or 2 teaspoons dry
½ cup olive oil
¼ cup lemon juice
Enough favorite pasta sauce to dress pasta (about 2 cups)

Sauté shrimp: Put a small amount of olive oil in skillet and cook shrimp over medium heat just until they turn pink and lose their translucency. Don’t overcook.

Combine shrimp, most of the Feta, green onions, garlic, tomatoes and dill. Mix. Whisk olive oil and lemon juice; pour over shrimp and mix. Toss pasta with pasta sauce. Pour shrimp mixture over pasta. Garnish with more Feta. Or mix everything together. You can also refrigerate and serve cold.

This is a crowd pleasing shrimp pasta.
