Recipes for pasta sauces

FAMILY REUNION PASTA

Can be assembled one day and baked the next.

4 cups penne or other short pasta, cooked and drained
1 pound Italian sausage
2 cups low fat or fat free Ricotta
1 teaspoon dry basil
1 jar, 26 oz favorite pasta sauce
3-4 cups shredded Italian blend or Mozzarella cheese
Parmesan cheese for sprinkling on top

Preheat oven to 350. Sauté sausage, crumble and drain.
Spray a 9x13 pan. Spread Ricotta on bottom, and then basil and sausage on top. Pour cooked pasta over. Pour pasta sauce evenly over pasta. Sprinkle with cheese. Cover and bake for about 20 minutes until heated through and cheese is melted. If pasta has been refrigerated, it could take up to 40 minutes to heat. Serve, making sure you get some of the Ricotta with each serving. Serve with plenty of Parmesan. Serves 8-10.

Tips from Rita’s kitchen: Use soy "sausage" or turkey sausage. Lean ground beef can be substituted, as well. Or leave the meat out altogether.
