Popsicle Recipe

Paradise Fruitsicles

From a great new kids’ book Sensational Snacks, Barbara Beery, Gibbs Smith Publishing.

All the recipes in here are healthy and the book even comes with a child-sized apron. This is a book that should be well used if you have little ones.

I love these because they start out with real fruit (imagine that!).

2 cups coarsely chopped fresh fruit
1/2 to 2 teaspoons lime juice
1 to 4 tablespoons honey or extra fine sugar

Put fruit, 1/2 teaspoon juice and a tablespoon of honey or sugar into blender or food processor.

Blend until smooth. Taste and add more juice or sweetener. Pour into molds and freeze for about 3 hours.

Yummy combos include mango and pineapple, strawberry and banana, or watermelon and peach.
