Peppermint Patty

 

Honestly, these peppermint patties are better than store bought!

1 pound confectioners' sugar
3 tablespoons butter, softened
2-3 teaspoons peppermint extract
1/4 teaspoon vanilla extract
1/4 cup evaporated milk
2 cups semisweet chocolate chips
2 tablespoons solid shortening (like Crisco)

Combine sugar, butter and extracts. Add milk and mix well. Roll into 1" balls and place on cookie sheet which has been lined with plastic wrap or foil. Chill for 20 minutes or place in freezer for 10 minutes. Meanwhile, melt chocolate and shortening.

Flatten patties with a glass to 1/4". Place on fork and lower pattie into chocolate, covering whole pattie. Do this quickly so pattie doesn't melt. Place on sprayed rack or lined cookie sheet to harden.

Store in refrigerator. Makes 4-5 dozen peppermint patties.
