6 oz cream cheese, softened
3/4 cup confectioners’ sugar
1 cup whipping cream
2 teaspoons minced mint leaves and 1/2 teaspoon minced lavender leaves
1 tablespoon plus 2 teaspoons lemon juice
Zest of lemon used to make juice
4 cups fresh berries
Combine cream cheese and sugar. Beat on low speed until smooth. Add cream and beat until smooth. Increase speed to medium high and beat until cream is billowy and holds medium firm peaks, about a minute. Stir in herbs. Add lemon juice and stir briefly just to blend.
Line up 4 parfait or wineglasses. Beginning with berries, evenly layer berries and cream. Garnish with mint sprig. Can be made 3 hours before serving. This parfait serves 4.
