Orzo

ORZO WITH SPINACH AND PARMESAN WITH BALSAMIC DRIZZLE

Orzo is rice-shaped pasta which cooks quickly.

1 cup orzo, cooked and drained

While pasta is cooking, combine
1/2 cup Parmesan cheese or more to taste
2-3 tablespoons cream or fat free half & half

Stir Parmesan mixture into orzo. Cover and keep warm while making spinach:

In large pan, heat 2 tablespoons olive oil with 3 cloves sliced garlic and 1/4 teaspoon red pepper flakes (opt). Cook 1 minute. Add 1 pound washed spinach (leave some water clinging to leaves), cover and cook until heated through, about 2 minutes. Season with salt and pepper. Make well in orzo and pile spinach in. Drizzle with balsamic vinegar. Add more Parmesan cheese for garnish. This Orzo Recipe serves 3-4.
