MEATLOAF RECIPE

PERSONAL MEATLOAF RECIPE WITH SPICY ASIAN CHILI SAUCE

Don’t be fooled by the label on authentic Asian chili sauces. The label will state “sweet chili sauce” because they contain sugar, along with hot peppers, garlic and vinegar. Hot, sweet and spicy! Sautéing the onion and garlic gives a refined flavor to the meatloaf recipe.

1-1/2 pounds ground chuck
4 slices whole wheat bread, slightly toasted and crumbled
Juice of two lemons, about 1/4 cup
1 small onion, minced
1 clove garlic, minced
1 large egg, slightly beaten
2 teaspoons salt
1 teaspoon pepper
6 lemon slices

Spicy chili sauce
Mix together 1/2 cup each Asian sweet chili sauce and catsup. Divide in half. Use half for glazing and heat the rest to pass.

Preheat oven to 350.

Cook onion and garlic in a bit of olive oil until soft but not brown. Put meat, bread, lemon juice, onion mixture, egg, salt and pepper into large bowl. Combine gently.

Shape into 6 small loaves and place on cookie sheet. Bake 45-60 minutes or until internal temperature reaches 160.

During the last 20 minutes, put a lemon slice on each meatloaf and brush with half the sauce. To serve, ladle a bit of the heated sauce on top of each loaf. Serves 6.
