Reader June Volz sent this recipe “From a 1948 Encyclopedic Cookbook”. June said she’d probably use cooked ham in here. For Marc Emral.
1 pound dried lima beans
1/2 cup uncooked ham
3/4 cup chopped onions
1/2 cup diced celery
3 quarts boiling water
1-1/2 teaspoon salt
Dash pepper
1 tall can evaporated milk (probably 15 oz or so)
Soak beans overnight and drain. Combine all ingredients and boil gently
for 3-4 hours. Adjust seasonings.
