ORIGINAL HOT BROWN

Now this is supposed to be from the Brown Hotel in Louisville.

For John, a Sycamore Township resident.

Cheese Sauce:
2 tablespoons butter
1/4 cup flour
2 cups milk
1/4 cup ea: grated spicy Jack cheese, Parmesan cheese
Salt to taste
1/2 teaspoon Worcestershire

Melt butter, blend in flour, add milk, cheeses and seasoning. Stir over low heat until smooth and thick. Set aside.

Sandwiches:
8 slices trimmed toast, cut into triangles
1 pound sliced turkey breast
8 slices ea: tomato and bacon (precooked, apple smoked) and/or ham
4 oz grated Parmesan
Parsley

Put toast in baking dishes. Arrange turkey on toast and cover with hot cheese sauce. Top with tomato, bacon and/or ham. Sprinkle with Parmesan. Bake at 400 until bubbly. Garnish with parsley.
