1 pound pork sausage
1 can, 14.5 oz, stewed tomatoes
1 can, 16 oz. kidney beans or favorite canned beans, rinsed and drained
1 cup uncooked rice
1 cup water
1 cup or more to taste, salsa
Cook and crumble sausage; drain.
Add rest of ingredients.
Bring to a boil and reduce heat to simmer, cover and cook for 20-25 minutes or until rice is tender. Serves 6-8.
