6-8 slices French bread, 1” thick slices
4 oz cream cheese, softened
1/3 cup chopped pecans
1/4 cup orange marmalade
3 large eggs
2 tablespoons sugar
1/2 cup orange juice
1 teaspoon vanilla
Butter or margarine
Powdered sugar, warmed orange marmalade or maple syrup
Cut a 3” pocket in each slice bread by cutting through top crust. Mix cream cheese, pecans and marmalade. Spread a tablespoon or so of mixture in each pocket. Mix eggs, sugar, orange juice and vanilla. Dip bread into egg mixture, coating both sides. Film the bottom of a skillet with butter in skillet until bubbly. Cook toast a couple minutes on each side or until golden.
Repeat until finished. Sprinkle with sugar or serve with marmalade or syrup.
