Grilled Steak

Hot summer days beckon us to gather ‘round the grill for cool suppers outdoors.

Grilled Steak with Tex-Mex Butter
Use your favorite steak. We like flank and sirloin. To make this healthier, substitute olive oil for the butter. This is enough for 2 pounds of meat


2 tablespoons butter or margarine, melted
3-4 teaspoons blackened steak seasoning

Rub each side of meat with melted butter and sprinkle with seasoning. Let stand at room temperature before grilling.

Grill steak over medium heat on grill and cook anywhere from 10-25 minutes depending upon desired doneness and thickness, turning once.

Tex-Mex Butter
2 sticks butter, room temperature
Heaping 1/2 teaspoon each: cumin, dried oregano, chili powder
1/4 teaspoon dried thyme
Pepper to taste

Mix together. Form a small log. Refrigerate 1 hour or freeze for longer storage.
To serve: Cut steak into serving pieces. Cut butter into slices and place on center of hot meat.
