Grilled Potatoes

Grilled Herbed New Potatoes
I learned the hard way that par boiling potatoes before grilling is the only way to go.

16 new potatoes, halved but not peeled

Cook potatoes in boiling water until easily pierced with a fork but still firm, about 10 minutes. While potatoes are cooking, make herb coating:

Mix together:
1/3 cup olive oil
Handful of chopped parsley
3 tablespoons lemon juice or to taste
1 scant tablespoon minced garlic or to taste
Salt and freshly ground black pepper

Drain potatoes. When cool enough to handle, thread onto skewers and place on hot grill until golden brown. Remove from skewers and toss with herb mixture. Serve hot, warm or room temperature. This grilled potatoes recipe serves 4-6.
