Green Salad

Avocado and Mandarin Orange Mixed Salad Greens

No need to make the dressing from scratch unless you want to. Good prepared Italian or Raspberry Vinaigrette works just fine here.

1 can Mandarin oranges, drained well
1 bunch green onions, sliced thin (a generous 1/2 cup)
Chopped toasted pecans or nuts of your choice, about 3/4 cup
1 bag mixed salad greens, about 4 cups
1 avocado, peeled and sliced
1/2 cup salad dressing
Combine oranges, onions and nuts. Refrigerate 30 minutes. Just before serving, place greens on platter, top with orange mixture and avocado slices. Drizzle with dressing. Serves 6-8.
To toast nuts: Preheat oven to 350. Place in single layer on cookie sheet. Toast 5-7 minutes or until fragrant. Keeps for weeks in covered container in pantry.
