No need to make the dressing from scratch unless you want to. Good prepared Italian or Raspberry Vinaigrette works just fine here.
1 can Mandarin oranges, drained well
1 bunch green onions, sliced thin (a generous 1/2 cup)
Chopped toasted pecans or nuts of your choice, about 3/4 cup
1 bag mixed salad greens, about 4 cups
1 avocado, peeled and sliced
1/2 cup salad dressing
Combine oranges, onions and nuts. Refrigerate 30 minutes. Just before serving,
place greens on platter, top with orange mixture and avocado slices. Drizzle
with dressing. Serves 6-8.
To toast nuts: Preheat oven to 350. Place in single layer on cookie sheet.
Toast 5-7 minutes or until fragrant. Keeps for weeks in covered container
in pantry.
