Garlic Mashed Potatoes Recipe

MASHED POTATOES WITH ROASTED GARLIC AND ONION

Roast garlic by slicing the top off the whole head. Place on foil and drizzle with olive oil. Make a foil pouch so garlic is completely covered with foil. Roast at 375 until garlic is softened and takes on a mellow flavor, about 1 hour.

Let cool and place head of garlic on its side. With the flat side of a chef’s knife, push the garlic out.

6-8 all purpose or baking potatoes, peeled and chunked
Salt
5 tablespoons butter
1 small onion, minced
Roasted garlic to taste
1/2 cup warmed cream or more as needed
Salt and pepper to taste
Sprinkling of Parmesan and chopped parsley

Cook potatoes in salted water to cover: boil until tender. Heat butter in skillet and cook onion over medium heat until translucent but not brown. Drain potatoes and mash. Add cooked onion and garlic. Beat in cream until you have the right consistency. Stir in salt and pepper. Sprinkle with Parmesan and parsley. Garlic Mashed Potatoes Serve 4-6.
