Energy bar are more popular than ever. And energy bar recipes are popping up all over the net. But the problem with most energy bar recipes is that they are full of unhealthy ingredients. The kind of ingredients that will make you "crash" and feel tired 30 minutes after eating them. Try this Good For You Energy Bar recipe.
Adapted from my book The Official Snack Guide for Beleaguered Sports Parents. This energy bar recipe is great for active kids who need a boost of quick energy after a sports event.
2 cups quick cooking or instant oatmeal
1 cup chopped nuts
1 stick butter or margarine
1/2 cup firmly packed dark brown sugar
1-1/2 teaspoons cinnamon
1/3 cup honey
1-1/4 cups dried fruit of your choice (cranberries, cherries, etc.)
1 cup honey graham cereal squares, crushed coarsely
Preheat oven to 350.
Line an 8x8 baking pan with foil, letting foil hang over sides. Spray foil. Pour oatmeal and nuts onto cookie sheet and bake about 10 minutes.
Meanwhile, combine butter, brown sugar, cinnamon and honey in saucepan. Cook until boiling. Pour in oat mixture dried fruit and crushed cereal and stir until blended.
Pour into pan, pressing mixture firmly.
Bake 15-18 minutes. After it comes out of oven and sits a few minutes, press again down firmly on top, using foil or wrap to protect your hands. Let cool and remove from pan.
Cut into 12 energy bars.
