Drying Dill - Reader Request

My mom likes dried dill to put in potato salad. Can you please tell me how to dry it? Thanks! - Diana

Hi, Diana,

For delicate herbs like dill leaves, harvest in the morning if possible before the sun drives out the volatile oils into the air. Chop the leaves up, then spread on drying racks or simply on a clean white cotton towel (not terry cloth).

Dry away from heat and light. In just a couple of days or even less, the leaves will be dry and green. Store away from heat and light and don't crush them up any more until you're ready to use them. The flavor/oils stay intact that way. So glad your Mom likes to do this! Dill contains calcium, so it's a great herb to use.
