DRIED FRUIT CORDIAL

Everyone loves to receive this. It gets better and better with age and the soaked fruit is wonderful over pound cake, ice cream, and the liqueur is special as an after-dinner drink.

1 pound dried apricots, pears or peaches
1 bottle, 3-1/3 cups approx. dry white wine
1 cup brandy
2 cups sugar

Place fruit in glass, ceramic or stainless steel container. Stir in wine, brandy and sugar until well blended. Cover tightly. Let stand at room temperature for at least a week to allow flavors to develop; stir occasionally for the first few days.

After as week, apricots and pears should be fairly soft; peaches will be slightly firm. After about a month, fruit will reach a very intense flavor. Cordial keeps indefinitely.
