Dirty rice recipe

Coating the rice with oil along with the aromatics, prevents it from becoming soggy.

Olive oil
1/2 generous cup chopped onion
1 cup long grain rice
2 cups chicken broth, low fat, and low sodium
1-2 teaspoons of seasoning rub (see above), or more to taste
Sea salt to taste
Garnish: Fresh chopped parsley or cilantro, chopped green onions or chives, tomato wedges.
Good Add Ins: Drained black beans, roasted red pepper strips, and roasted fresh corn (removed from cob)

Film bottom of saucepan with olive oil. Add onion and sauté just until fragrant. Add rice and seasoning. Sauté until rice is well covered with seasoning and starts to smell fragrant, as well. Add broth. Cover and bring to a boil. Lower to simmer. Cook, covered, about 20 minutes or until rice is tender. Add garnishes and serve.
