Diabetic Cranberry & Pineapple Sherbet

Recipe for Diabetics: Cranberry and Pineapple Sherbet

From: The All New Diabetic Cookbook, Rutledge Hill Press.

This is light and refreshing, great for everyone after a big meal, but especially nice for those on restricted diets.

1 pkg, .3oz sugar-free raspberry gelatin
1 cup low-calorie cranberry juice cocktail, boiling
1 cup cold low-calorie cranberry juice cocktail
1 cup crushed unsweetened pineapple
1 cup evaporated fat-free milk

Dissolve gelatin in boiling cranberry juice in pan.

Add cold juice and beat until blended. Add pineapple and milk and mix well. Freeze in shallow pan until crystals form about 1” from edge. This takes about 1-1/2 hours.

Beat until cream and return mixture to pan and freeze, stirring occasionally, until frozen but slightly mushy, about 2 hours. Serves 8.
