Check your calendar – the first Saturday in May is Kentucky Derby Day.
Some of the fastes horses in the world compete in the famous race for the distinction of wearing a necklace of roses.
It’s also a big party day – country ham, fried apples, biscuits, spoonbread, green salad, fresh mint juleps and lemonade with mint are all great buffet items.
And to top it off, how about my “Almost Like Derby Day Recipe for Pie”.
Now the authentic Kentucky pie is a closely guarded secret and even the name is copyrighted! But I think my pie runs like a horse I bet on a few years ago – it’s a close second!
Start with an unbaked pie crust. Here’s the filling:
3 eggs
3/4 cup sugar
1 cup dark corn syrup
1/4 cup (1/2 stick) butter, melted and cooled
1 teaspoon vanilla
1-1/2 cups chopped pecans
1 cup chocolate chips
Whipping cream for garnish
Preheat oven to 350. Beat eggs and then beat in sugar, corn syrup, butter and vanilla. Stir in nuts and chocolate. Bake about 55 minutes or until filling is puffed and crust is golden. Cool and serve with whipped cream. Store in refrigerator.
