Cranberry Celebration Salad


My readers are the best! When I asked for help finding a recipe similar to Kroger’s cranberry celebration salad for a reader, I was amazed that so many of you responded, like Ginny Moorehouse and Marilyn Hoskins, whose recipes I’m sharing today. Kroger’s salad has a loose texture, and both Ginny and Marilyn replicated this.

Most likely, Ginny’s is closer to what I tasted at Kroger, since hers uses whole cranberry sauce. But both sound equally good.


Ginny Moorehouse’s Cranberry Celebration Salad.

“I’ve been making this for 15 years for my family”, Ginny said.
1 pkg cherry or strawberry jello
1 cup boiling liquid: 1/2 cup ea orange juice and water
1-3/4 cups cranberry sauce, jelled type
1 cup diced celery (opt but good)
1/2 cup chopped walnuts
3/4 cup crushed drained pineapple
Dissolve jello in boiling liquid. Add cranberry sauce and blend. When it starts to congeal, add other ingredients. This will not get real firm.

Marilyn Hoskin’s Cranberry Celebration Salad

Marilyn, a Milford reader, developed this from an Ocean Spray recipe and by reading the ingredients on the Kroger salad. Try substituting cherry jello if you like. Good work!
15 oz crushed pineapple, drained – save juice
1/2 cup cranberry juice
2 tablespoons lemon juice
1 pkg, 3 oz, raspberry jello
15 oz can whole cranberry sauce
1/2 cup chopped walnuts
Boil pineapple, cranberry and lemon juice together. Add jello. Remove from heat and stir in cranberries. Put in fridge till almost set. Add pineapple and nuts. Add a half cup of chopped celery if you like.
