Couscous

 

WHOLE WHEAT COUSCOUS AND FRESH GREENS

1 teaspoon minced garlic
1 cup whole wheat cous cous
2 cups broth of your choice
Several handfuls of fresh greens of your choice: mixed greens, spinach, chard, etc., torn into pieces if necessary
Romano cheese to taste

Saute garlic in 2 tablespoons olive oil just until fragrant but not brown.

Add broth and bring to a boil.

Add cous cous and greens and stir.

Put lid on and remove from heat. Let sit 5 minutes. Fluff with fork.

Garnish with cheese and serve this delicious couscous.

Whole Wheat CousCous is a healthy addition to any meal.
