Cous cous

TOFU, COUS COUS AND CHICK PEAS WITH HERBS AND PARMESAN CHEESE

We’re all trying to cut down on the saturated fat that we eat which is in many meats. But to try to put a satisfying meal on the table sans meat is sometimes a challenge. Here’s a recipe that I use as a main or side dish using healthful grains and veggies. Now if you are feeding little ones, you may want to leave out the red pepper flakes.

1 T.Olive Oil
1 t. Garlic
Pinch red pepper
1 Can Chick peas or other bean of choice
Extra Firm Tofu
2 C. Vegetable broth
1 C. Cous Cous
Herbs like 2” sprig of basil, 1” sprig of rosemary or thyme, lemon grass or a couple of sprigs of parsley.
A Handful or Two of Fresh Greens
Sprinkle of Parmesan
Slices of Fresh Tomato

Film the bottom of a pan with olive oil. Turn heat to medium. Add a teaspoon of garlic and a shake of red pepper.

Pour in a can of drained chick peas or other beans of your choice.

Drain tofu and cut in to chunks. Add to the pot. Cook until fragrant, about a minute. Now add 2 cups broth choice and any herbs you might have (this is optional).

Bring to a boil and immediately pour in a cup of cous cous and a handful or two of fresh greens. Stir and put the lid on the pot.

Turn the fire off and let sit 5 minutes. Fluff with fork, turn out onto a plate, and serve with a sprinkling of Parmesan and slices of fresh tomatoes if you like.
