Chicken Salad like Remke

Carol Storn's Version Remke Chicken Salad

"Hope this helps", Carol said. See my note below from Don Fine of Remke's -
go ahead and add nuts and fruit as he suggests.

2 1/2 pounds boneless skinless chicken breasts
3 ribs celery, finely chopped
1/4 cup onion, finely chopped (or to taste)
1/8 tsp white pepper
1/4 tsp garlic powder
2 cups Hellman's mayo

In large pan, cover chicken with cold water. Bake at 325 about 1 hour.

Partially cool in water. Shred or cut into bite-sized pieces. Add remaining ingredients and refrigerate.

Don Fine, Deli & Bakery Buyer for Remke's told me that their chicken salad
is pretty simple. The hitch? "Each batch makes 40 pounds and several of the
8 stores make several batches a week. I tried to pry ingredients out of him,
and he was too cute (well, I don't really know what he looks like, but his
personality is a winner). Here's what he said "High quality diced chicken
breast. We have one with mandarin oranges, almonds and craisins and a
regular one with grapes and pecans." They're doing something right - they've
been in business 108 years in Kentucky!
