Remember Chicken Parmesan?
It’s a standby, which never loses appeal.
It’s kid friendly, too. Let the kids make the crumbs in a sealed baggy by whacking it with the bottom of a saucepan, or rolling over it with a rolling pin.
1 cut-up frying chicken
1 cup mayonnaise, regular or light
1 cup corn flake crumbs
1 cup Parmesan cheese
Dash of salt and pepper
Preheat oven to 350. Mix crumbs and Parmesan cheese. Brush chicken with
mayonnaise; coat with crumbs; sprinkle with salt and pepper. Place in 9x13
pan. Bake 1 hour or until tender. Serves 3-4.
