What's the difference between Cake Flour and All Purpose Flour?

Cake flour is made from soft wheat while all-purpose is a blend of soft and hard wheats.

The best cake flour comes from the South, where the wheat is exceptionally soft. Cake flour is sifted many times before packaging, and may contain a bit of cornstarch.
