Bread and Butter Pickles

SONIA ERVIN’S FROZEN BREAD AND BUTTER PICKLES

My sister Sonia, a Brown County resident, is the eldest of nine children and the matriarch of a huge family. She loves to cook and is creative beyond belief. “We love these pickles and everyone who tries them, loves them. I experimented and came up with this recipe. I can never make enough – they’re crispy and really easy”, she said.

Bread and Butter Pickles

10 medium cucumbers
1 medium to large onion, chopped
1 red bell pepper, chopped (opt)
4 cups sugar
3 cups clear vinegar
2 tablespoons mustard seed
2 teaspoon celery seed
1 teaspoon powdered ginger
1 teaspoon peppercorns
6 garlic cloves, sliced thinly (opt)

Slice cucumbers thinly and place in bowl with chopped onions and red pepper.

Cook sugar and vinegar until sugar dissolves. Add spices and garlic and, stirring constantly, bring to a boil. Turn down to a simmer and pour over cucumber mixture.

Cover and keep at room temperature until cool. You’ll see the cucumbers wilting. When cool, use slotted spoon and spoon cucumbers into freezer containers. Divide juice between containers and freeze.

Thaw Bread and Butter Pickles and enjoy. Makes 7-8 pints.
