Blondies

TOFFEE BLONDIES BROWNIES

 

Not the prettiest kids on the block (these bake up fairly light in color) but so good. My family gobbles these up as a snack or quick dessert.

1 stick salted butter, melted
1 cup firmly packed light brown sugar
2 large eggs, room temperature
1-1/4 teaspoons vanilla
1-1/2 cups flour
1 generous cup toffee bits

Preheat oven to 350. Line bottom and sides of 8” square baking pan with foil, and let some overhang on the sides. Cream butter and sugar until smooth. Beat in eggs and vanilla. Add flour and mix until combined. Stir in toffee and spread into pan.

Bake until golden and toothpick inserted in center comes out clean, about 30 minutes or so. Let cool in pan. Grasping foil, lift brownies from pan. Peel off foil and cut into 16 squares using a serrated knife.

These blondies are good keepers at room temperature, covered, up to about a week.
