USDA Beef Grades

 

What’s in a name?

Prime is the highest grade with the most marbling and flavor.

Choice is the next grade down; with a moderate to a small degree of marbling.

“Top Choice” indicates the best of choice, but isn’t an official grade.

Select is the lowest and least expensive. Select is leaner, tougher and less juicy, but oftentimes more healthy, depending upon the method of cooking. Select is great for long cooking times.
