Bean Soup Mix

A Great Gift | Bean Soup Mix

Bean Soup with Pasta are a perfect pairing with an AllClad stockpot lined with copper in the middle!

1 cup dried onion flakes
2 jars
½ oz ea. dried celery flakes
1 cup dried parsley flakes
3 tablespoons dried basil
3 tablespoons dried oregano
1 tablespoon garlic powder
2 teaspoons coarsely ground pepper
2-1/4 oz ea. beef-flavored bouillon granules
1 pound each of the following dried beans: black-eyed peas, black beans,; kidney beans, navy beans
1 pound small shell pasta, uncooked

Combine onion flakes, celery flakes, parsley flakes, basil, oregano, garlic powder and pepper together. Place in 6 airtight plastic bags. Add 2 tablespoons plus ¼ teaspoon bouillon granules to each package. Label “Herb Mix” and seal.

Combine beans together. Divide evenly and place in 6 plastic bags. Label “Bean Mix” and seal. Place 1/3 cup pasta into 6 plastic bags. Label “Pasta” and seal. Place 1 bag herb mix, 1 bag bean mix and 1 bag pasta in a gift container; repeat procedure with remaining bags. Makes 6 gifts.

Directions for gift card: Sort and wash bean mix; cover with water 2 inches above beans and soak for 8 hours. Drain. Combine beans, 3 quarts chicken broth, vegetable broth or water or a combination, herb mix, 1 carrot, chopped, and 1 generous cup or so of cooked ham in soup pot. Bring to a boil and reduce heat. Simmer about 2 hours, stirring occasionally. Add 1 can, 14.5 oz, Mexican style stewed tomatoes or canned tomatoes of your choice and the pasta. Cook 20 minutes. Serves 6-8.

TIP FROM RITA’S KITCHEN

Quick soak method for beans: Place beans in pot and cover with 2 inches water above beans. Bring to a boil. Remove from heat and cover. Let stand 1 hour. Drain.
