Bean Salad

The Best Bean Salad

Not your usual bean salad. So good, and again, a great do-ahead dish for summer. If you want less heat, use black pepper instead of red pepper flakes.

Salad:
2 cans beans: drained and rinsed
1 bunch green onions, sliced
2 tomatoes, diced
1 bell pepper, diced
2 ribs celery, diced
1 cup frozen corn, thawed (opt)

Dressing:
1/3 cup red wine vinegar
2/3 cup olive oil or more to taste
1-1/2 to 2 teaspoons minced garlic
1-1/2 to 2 teaspoons cumin
Salt to taste
Shake of red pepper flakes, to taste (opt)

Mix bean salad ingredients together. Whisk dressing ingredients together and pour over salad. Mix well and adjust seasonings. Serves 4-6.
