Mock Zucchini Crab Cakes

Mock zucchini crab cakes you’ll make again and again

 

So many of you asked for this recipe. A good contender for the community recipe hall of fame. If it’s too dry, add another egg; if too wet, add more crumbs. I originally received this from a journalist colleague.

2 cups coarsely grated zucchini, unpeeled
1 small to medium onion, finely chopped or grated
1 cup Italian bread crumbs
1 tablespoon mayonnaise, regular or light
2-3 teaspoons Old Bay seasoning
1 large egg, beaten or equivalent substitute
Pepper to taste

Put zucchini and onion in colander to drain some of the liquid out. Combine with rest of ingredients. Heat oil in skillet. Form mixture into patties and sauté over medium heat until golden brown, about 2 minutes per side. Makes 4 big or 6 medium cakes.
