Pears with Low Fat, Sugar Free Chocolate Silk Sauce

Pears with Chocolate Sauce

4 teaspoons unsweetened cocoa powder
4 teaspoons sugar or Splenda
2 teaspoons cornstarch
1 cup evaporated skim milk, divided
1 teaspoon vanilla or 1/2 teaspoon almond extract
6-8 canned pear halves, drained (no sugar added packed in water or juice, not syrup)

Whisk cocoa, sugar and cornstarch in pan. Add 1/4 cup milk and stir until sugar is incorporated well. Add rest of milk. Cook over low heat until boiling, stirring constantly. Lower heat and cook until thickened, a couple minutes longer. Remove from heat and stir in flavoring. Cool, cover and refrigerate.
To serve, spoon some sauce onto each plate. Place pears on top.  Drizzle a little more sauce on top and garnish with berry or mint leaf.
