Mango Salsa

GOOD WITH ANYTHING MANGO SALSA

My daughter-in-law, Jessie, made this wonderful mango salsa to top the grilled chicken served for dinner. When you taste the salsa on grilled chicken, salmon or beef, you’ll understand why I renamed it: Good with anything Melon/Mango Salsa! Hey, it’s also a great recipe to start using that cilantro which is probably growing well now.

Mango Salsa

2 c watermelon
1 c mango
1/4 cup finely chopped red onion
2 Tbsp cilantro
2 Tbsp jalapeno pepper
1 Tbsp lime juice
1/2 tsp sugar
1/4 tsp salt

Mix together. Can be made ahead.

Tips from Rita’s garden:
Cilantro is an herb that cools the tummy. That’s why it’s used in lots of Asian, Southwestern and Indian dishes – to counteract the heat from the hot peppers, etc. used in these cuisines.
