Homemade Chicken Soup Recipe

SOUTHWESTERN CHICKEN TACO SOUP

We never get tired of Southwestern food at our house. And I love it when I can throw something in the crock pot in the afternoon and have it ready for supper! If you have a new generation crock pot, you can put this on low in the morning and time it – it will automatically set the crock pot on warm, ready and waiting for you at dinner!

First, spray the crock pot for easy cleanup. You may want to add more cumin and garlic at the end. Even a handful of rice would be good!

2 cans chicken broth or more if needed
1 can tomatoes and chilies
2 cups corn
2 bell peppers, chopped
1 generous cup onion, chopped
1 pound chicken breasts cut into chunks
1 teaspoon garlic, minced
1 can kidney beans, drained
1-2 packages, 1.25 ea., dry taco seasoning
1 teaspoon ground cumin
Salt and pepper

Add everything to crock pot but cumin, salt and pepper. Cook on low 4-5 hours or high 2-3, until chicken is cooked Add more broth if necessary. Stir in seasonings. Serves 6-8. Garnish with cheddar or Mexican cheese, green onions, etc.
