Gazpacho Recipe


Gazacho is the perfect summer time recipe. This recipe for gazpacho is the perfect reward for my hard work in the garden. It’s as if the bounty of my garden was created to make this refreshing, delicious and flavorful soup.


Gazpacho originated in Spain and recipes can be found in the earliest Spanish cookbooks and written recipes. Classic gazpacho recipes may include bread and be more like a stew than most of are used to. There are even 'white' versions that are made with bread and almonds.

I recently had a friend visit from Poland. At first you could see the quizzical look on her face as she realized that gazpacho recipes make a cold soup. But then her face brightened when she tasted the explosion of fresh flavors. It’s like a garden in a bowl.

This is a simple gazpacho recipe that can be thrown together fast. In the summer time, we get a lot of requests for gazpacho recipes. Some are looking for recipes that remind them of home, other for restaurant recipe clones.

This gazpacho recipe is easy to put together using veggies from the garden, the farmers market or your local grocery.

Gazpacho Recipe

4 Cups Chilled V-8 Juice (regular or spicy)
1/2 Cup Red Onion
2 Cups Chopped Tomatoes (peeled or not)
1 Cup Diced Red or Yellow Bell Pepper
1 Cup Peeled Diced Cucumber
1 "Palmful" Fresh Parsley
1 "Palmful" Fresh Basil (or a bit less)
2 Cloves Minced Garlic
1/4 C Lime Juice
2 T Balsamic Vinegar
1 t. Chopped Fresh Taragon (optional)
Sugar - a bit, to taste
Salt and Pepper
A drizzle of Extra Virgin Olive Oil

Combine all ingredients in a large bowl and mix. Transfer 2 C. of mixture in to a blender or food processor and puree. Return to the bowl and mix with the unblended ingredients. Salt and Pepper to taste. Add a drizzle of olive oil to the gazpacho before serving.

Let chill in the refrigerator for a few hours or overnight before serving. If you're in a rush, you can even add a few ice cubes. It will make a thinner soup, but cool the gazpacho down more quickly.

Garnish each bowl of gazpacho with minced parsley or basil or some diced cucumbers. I also like to offer a bit of hot sauce for guests who prefer their gazpacho a bit spicy.

Serve this gazpacho recipe with crunchy bread, corn on the cob and a light salad for a light meal.
