Chocolate Buckeyes Recipe

This chocolate buckeyes recipe is a reader favorite. The buckeyes are a peanut butter center, dipped in chocolate with a little peanut butter circle showing through on one side - they look just like a real Ohio buckeye.

Dear Rita: I would love to have a copy of your Chocolate Buckeyes Recipe. My fiancé is from Ohio, and I would love to surprise him with lots of peanut butter buckeyes around the groom's cake at our wedding. I think buckeys would be a nice piece of home for him and all of his “buckeye” relatives from Ohio as we are getting married in Maryland where I am from. Can you please email me your recipe for buckeyes?

Hi, Dani,

Here is my recipe for chocolate buckeyes. And guess what? You can freeze this recipe for buckeyes several months ahead of time (before dipping in the chocolate). And dip the peanut butter buckeye while they're still frozen - the coating clings to the buckeye really quick and stays on. Congrats on your wedding - he'll love these.

By the way, I will be doing a video for chocolate buckeye for my web site for fall. Chocolate buckeyes are a tradition around our house when football season kicks off.

Chocolate Buckeyes Recipe

Feel free to double this recipe for buckeyes.

1 pound jar creamy peanut butter (I like Kroger brand)
1/2 pound real butter, softened
2-3 teaspoons vanilla
1-1/2 pounds confectioners’ sugar
12-16 oz semisweet, bittersweet or milk chocolate morsels for coating (purists use milk chocolate)
2 tablespoons shortening

Blend everything but chocolate and shortening to make a dough. Roll into 1” balls. Put the balls into the freezer while melting the chocolate with the shortening. You can melt the chocolate in a nonstick pan over low heat, in a microwave or even in a double boiler. When you dip the frozen balls into the melted chocolate (let excess drip off) they start to set up immediately. Put them on waxed paper, parchment paper or sprayed foil to finish setting up. Makes 5-7 dozen chocolate buckeyes.

Tips from Rita’s kitchen:
Go ahead and freeze the mixture either in bulk or roll into balls ahead of time. When you’re ready to give as a gift, all you have to do then is to coat them in melted chocolate.

Save this for Easter, too. This recipe makes great peanut butter eggs!
