Tips from Rita’s Kitchen:

Cookies are obviously a classic. Whether you’re a fan of crispy and thin cookies, or thick and moist, who doesn’t love a good cookie? Unfortunately, for bakers, there are an awful lot of ways to mess up a good cookie. I bet there isn’t one person who bakes who hasn’t burned a batch, turned them over to decide if the cookie can be scraped in to saving! Here are 5 quick tips to making the perfect cookie.

#1 Shiny cookie sheets bake more consistently than dark colored ones. Line dark colored sheets with foil.

#2 To avoid excess spread, let cookie sheets cool before putting another batch of cookies on them.

#3 Rotate cookie sheets in oven halfway through baking time if necessary for evenly baked cookies. If you use insulated cookie sheets, this isn’t necessary.

#4 Bake cookies on middle and upper racks of oven.

#5 Under bake cookies a couple of minutes. Residual heat will continue to “bake” them after you remove them from the oven.
