BODACIOUS BAKED BEANS

Baked Beans Recipes appear at just every gathering on Labor Day. The ubiquitous baked beans. Boring? I have to admit that yes, most of the time, baked beans are just “there”, to be eaten if you’re really hungry and all the potato salad is gone.

But today I’m sharing a recipe that elevates the lowly baked bean casserole to something fabulous and sassy – that’s why I call these “BODACIOUS BAKED BEANS”.

This really is a delicious casserole which can be done ahead and served hot, warm or room temperature! The secret? OK, I’ll give – it’s the Granny Smith Apple!

Rita's Baked Beans Recipe

Baked Beans

2 cans pork and beans, 16 oz ea
1 can favorite beans, drained (I like chick peas but kidney, great northern, cannelini, etc. will work well)
1 cup favorite Barbecue sauce
½ to ¾ cup dark brown sugar
1 medium onion, chopped
1 nice size tart apple (I like Granny Smith)
4-6 strips bacon, regular or turkey, uncooked

Mix all ingredients except for the bacon. Pour into shallow casserole sprayed with vegetable spray for easy cleanup. Cut bacon in half or dice up. Place on top of beans. Bake in 350 degree oven for one hour, uncovered. This baked bean recipe serves 6-8.
